The Perfect Egg White Omelet for Your CKD Diet

Most folks who are getting used to the CKD diet look over the list of things they’re no longer allowed to enjoy and grimly sigh with dismay. While the truth is that the CKD diet will take some getting used to, another equally important truth is that it doesn’t have to be all bad. While bacon-wrapped-bacon may no longer be on the menu, an egg white omelet for breakfast can be every bit as delicious, and far more healthy.

What You Will Need

 

     3 eggs

     A bit of butter

     A splash of milk

     Some feta cheese

     Some parmesan cheese

     Some black pepper

     Sweet red and green bell peppers

     1 strip of turkey bacon

“For those on the CKD diet, it’s imperative that they limit the amount of phosphorous and potassium intake as these can cause extra strain on their heart,” says one dietitian from dialysis Henderson who specializes in working with dialysis patients.  “It’s especially important for those that are already on dialysis. But the trick is to limit the intake, you don’t have to eradicate it altogether. All vegetables are going to have some potassium.”

 

Prep Work

 

This recipe requires a bit of preparation. If you haven’t bought the egg whites separately, you’re going to have to separate out the yolks yourself. This will require 3 eggs and a cup for your whites. You’ll need to crack the egg in half without dumping the contents of the egg into a cup. Then you pour the egg from one half the shell into the other, back and forth, without allowing the yolks to get into the cup.

The yolk can then be set aside and you’ll have only the whites for your omelet. You can then add a splash of milk to the egg whites. Other than that you, only need to dice the green and red peppers, which are incredibly healthy for CKD sufferers and wonderfully tasty as well. The turkey bacon should be sliced into even pieces, and mostly comes precooked.

 

Cooking the Omelet

 

You should have a small omelet-sized pan and a spatula handy. First, melt a thin sliver of butter at the bottom of the pan over low heat, enough to coat the entire bottom. This will prevent the egg whites from sticking to the pan. When the butter is melted and the pan is coated, pour the egg whites into the pan, and turn the heat up to medium.

Once you begin to see the egg whites starting to whiten and cook, add the parmesan. Parmesan is a great supplement for salt and it will effectively season the eggs. Then add the sliced turkey bacon and the diced bell peppers and wait for the omelet to cook through. Add the feta cheese. Season with black pepper and serve with a side of peaches. Voila! A perfect egg white omelet for your CKD diet.
